Enchilada Turkey Stuffed Peppers

Turkey Enchilada stuffed peppers! It looks and tastes gourmet, but takes minimal effort! Definitely a meal that makes you look and feel pretty darn impressive in the kitchen.
First, you want to preheat your oven to 375 bake!
Then, wash and core your peppers, while letting them stay in their true pepper shape. I purposely look for flat bottomed peppers to make sure they stand up in the glass dish. I also pick a variety of different peppers! I love mixing it up.
While you're preparing the rest of your meal, you throw these empty peppers in the oven to start cooking!

While the peppers are baking in the oven, you cook your ground meat (I use turkey meat as my healthy option) with chopped yellow onion in a large pan. You will mix frequently on the stove over a medium heat until the turkey meat is cooked through, about 7 minutes.
Once the ground meat is cooked through, add in diced tomatoes, corn, black beans and red enchilada sauce.

This is what the red enchilada sauce looks like if you haven't used it before. It's usually in the grocery store aisle near the beans. You pour this over all of the vegetables and meat and mix together.
Once all the contents of the saucepan have been doused in enchilada sauce, you can take the peppers out of the oven and start to spoon the mixture into the peppers. Be careful though, the peppers and the glass plate are very hot!
Stuff each pepper to the absolute brim, even pushing down to overstuff the pepper! Half way through I had a layer of cheese, but that's just me....
Once they're stuffed you take a generous sprinkle of cheese and add to the top of each pepper. Cook these in the oven for about 3-5 minutes, until the cheese is completely melted. The peppers should have already been cooking in the oven about 15-20 minutes.
When you're done, you can garnish the top with sour cream, jalapeƱos, scallions, etc. I've tried it all, and I've never been disappointed. Sour cream is a must.
