Garlic Spiced Pumpkin Seeds

PUMPKIN SEEDS ARE MY FAVORITE FALL SNACK! Whenever I have friends over I try to make this into an activity. All you need is a pumpkin, olive oil and spices!! So easy, fun and delicious.

First you carve open your pumpkin. This part is definitely a process. You need a sharp knife and a large spoon to really get the pumpkin seeds out. Then you can either choose to design your pumpkin or just gut it!

Once you have taken all the seeds out, you run them through some cold water and drain them out, removing all the gross pumpkin guts. Now is a good time to preheat your oven to 375 bake!


Then, once they are all cleaned up you put them in a bowl with a generous drizzle of olive oil and ALL THE SPICES in your spice cabinet! No I'm serious, go crazy. I mix it up every time. My favorite combination is garlic salt, garlic powder, red chili flakes and black pepper. Sometimes I even throw some parmesan cheese in there. The options are endless. You can even go sweet and coat them in cinnamon and sugar!


I do NOT hold back on the spicing! Then I bake them in the oven for about 18-20 minutes on 375 bake! Keep an eye on them though to make sure they don't burn.
That's it! SO easy! Save some for later, eat them all right away, do your thing! They literally taste like popcorn. I love snacking on these while I indulge in some guilty pleasure TV.
